For the Crust:
- 4 large carrots, peeled and chopped
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 cup toasted hazelnuts, chopped
- 1 tablespoon honey
- Pinch of salt
Instructions
1. Prepare the Crust:
- Steam the chopped carrots until tender, then let cool completely.
- In a mixing bowl, whip the heavy cream with powdered sugar until stiff peaks form.
- Blend the cooled carrots with vanilla, cinnamon, nutmeg, and salt until smooth.
- Gently fold the carrot mixture into the whipped cream until fully combined.
- Spoon the mousse into serving glasses and chill for at least 2 hours.
- Before serving, top with chopped toasted hazelnuts and a drizzle of honey.
