A light and airy mousse where golden carrots meet toasted spices and hazelnut crunch, delivering a taste of sunshine in every spoonful.

For the Crust:

  • 4 large carrots, peeled and chopped
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup toasted hazelnuts, chopped
  • 1 tablespoon honey
  • Pinch of salt

Instructions

1. Prepare the Crust:

  1. Steam the chopped carrots until tender, then let cool completely.
  2. In a mixing bowl, whip the heavy cream with powdered sugar until stiff peaks form.
  3. Blend the cooled carrots with vanilla, cinnamon, nutmeg, and salt until smooth.
  4. Gently fold the carrot mixture into the whipped cream until fully combined.
  5. Spoon the mousse into serving glasses and chill for at least 2 hours.
  6. Before serving, top with chopped toasted hazelnuts and a drizzle of honey.
