For the Crust:
- 1 cup almond milk
- 1 cup heavy cream
- 1/4 cup honey
- 1 packet unflavored gelatin
- 1 teaspoon vanilla extract
- 1/4 cup toasted almonds, chopped
Instructions
1. Prepare the Crust:
- In a saucepan, combine almond milk and heavy cream. Heat over medium heat until it just begins to simmer.
- Stir in honey and vanilla extract. Remove from heat.
- Sprinkle gelatin over 2 tablespoons of cold water and let it sit for 5 minutes to bloom. Add the gelatin to the milk mixture and stir until fully dissolved. Pour into cups and refrigerate for at least 4 hours until set.
- Before serving, top with toasted almonds.
