Ingredients

For the Crust:

  • 1 cup almond milk
  • 1 cup heavy cream
  • 1/4 cup honey
  • 1 packet unflavored gelatin
  • 1 teaspoon vanilla extract
  • 1/4 cup toasted almonds, chopped

Instructions

1. Prepare the Crust:

  1. In a saucepan, combine almond milk and heavy cream. Heat over medium heat until it just begins to simmer.
  2. Stir in honey and vanilla extract. Remove from heat.
  3. Sprinkle gelatin over 2 tablespoons of cold water and let it sit for 5 minutes to bloom. Add the gelatin to the milk mixture and stir until fully dissolved. Pour into cups and refrigerate for at least 4 hours until set.
  4. Before serving, top with toasted almonds.

Notes

You can customize the seasonings to taste.
