For the Crust:

  • 4 boneless, skinless chicken breasts
  • 2 cups apple cider
  • 1/4 cup apple cider vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 4 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1 apple, thinly sliced
  • 1/4 cup chopped walnuts
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard

Instructions

1. Prepare the Crust:

  1. Season chicken breasts with salt, pepper, thyme, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 6-7 minutes per side until golden and cooked through.
  3. Pour apple cider and apple cider vinegar into the skillet. Simmer for 5-7 minutes until the sauce thickens and coats the chicken.
  4. In a large bowl, combine cabbage, carrots, apple slices, and walnuts.
  5. Whisk together honey and Dijon mustard, then toss with the slaw until evenly coated.
  6. Serve the glazed chicken alongside the crisp autumn slaw, drizzling with extra pan sauce if desired.
