For the Crust:
- 4 boneless, skinless chicken breasts
- 2 cups apple cider
- 1/4 cup apple cider vinegar
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder

- 4 cups shredded green cabbage
- 1 cup shredded carrots
- 1 apple, thinly sliced
- 1/4 cup chopped walnuts
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
Instructions
1. Prepare the Crust:
- Season chicken breasts with salt, pepper, thyme, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat. Cook chicken for 6-7 minutes per side until golden and cooked through.
- Pour apple cider and apple cider vinegar into the skillet. Simmer for 5-7 minutes until the sauce thickens and coats the chicken.
- In a large bowl, combine cabbage, carrots, apple slices, and walnuts.
- Whisk together honey and Dijon mustard, then toss with the slaw until evenly coated.
- Serve the glazed chicken alongside the crisp autumn slaw, drizzling with extra pan sauce if desired.
