For the Crust:
- 1 sheet frozen phyllo dough, thawed
- 4 oz brie cheese, rind removed and cubed
- 1/4 cup cranberry sauce
- 2 tbsp honey
- 1 tbsp melted butter
- 1 tsp fresh thyme leaves
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Lightly grease a mini muffin tin.
- Cut phyllo dough into 12 squares. Layer 3 squares into each muffin cup, brushing each layer with melted butter.
- Place a cube of brie into each phyllo cup, top with a teaspoon of cranberry sauce, and drizzle with honey.
- Bake for 10-12 minutes until phyllo is golden and brie is melted.
- Remove from oven, sprinkle with thyme, salt, and pepper. Let cool slightly before serving.
