A savory-sweet tart featuring creamy baked brie, fresh figs, and a crunchy pistachio topping drizzled with honey.

For the Crust:

  • 1 sheet puff pastry, thawed
  • 8 oz brie cheese, rind removed and sliced
  • 6 fresh figs, quartered
  • 1/4 cup shelled pistachios, finely chopped
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 1 tsp fresh thyme leaves
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Roll out puff pastry on a parchment-lined baking sheet.
  2. Arrange brie slices evenly over the pastry, leaving a 1-inch border around the edges.
  3. Scatter fig quarters over the brie, then drizzle with olive oil and sprinkle with thyme, salt, and pepper.
  4. Fold the edges of the pastry over the filling to create a rustic crust. Bake for 20-25 minutes, until golden and puffed.
  5. While tart bakes, mix chopped pistachios with honey in a small bowl.
  6. Remove tart from oven, drizzle with honey-pistachio mixture, and let cool slightly before serving.
