For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup chopped walnuts
- 1 cup chopped pistachios
- 1/2 cup honey
- 1/2 cup melted butter
- 1 tsp ground cinnamon
- 1/4 cup water
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (163°C). Mix graham cracker crumbs with melted butter and press into a 9-inch springform pan.
- In a large bowl, beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing just until combined.
- Pour cheesecake filling over crust and bake for 45-50 minutes, until center is set. Let cool completely.
- Combine walnuts, pistachios, honey, melted butter, cinnamon, and water in a saucepan. Simmer for 5 minutes, then spread over cooled cheesecake.
- Refrigerate for at least 4 hours or overnight before serving.
