For the Crust:
- 2 medium beets, peeled and cubed
- 2 medium sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 4 ounces goat cheese, crumbled
- 1/4 cup pure maple syrup
- 1 tablespoon balsamic vinegar
- 1/4 cup chopped walnuts, toasted
- Fresh parsley, for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss cubed beets and sweet potatoes with olive oil, salt, pepper, and thyme on a baking sheet.
- Roast for 25-30 minutes, stirring halfway, until tender and lightly caramelized. Let cool slightly.
- Arrange roasted vegetables on a serving board. Scatter crumbled goat cheese and toasted walnuts over top.
- In a small bowl, whisk together maple syrup and balsamic vinegar. Drizzle over the board. Garnish with fresh parsley and serve warm or at room temperature.
