Elegant individual cheesecake towers layered with a creamy pistachio filling, fresh blackberry compote, and a crunchy nut crumble.


Ingredients

For the Crust:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/2 cup shelled pistachios, finely chopped
  • 1 tsp vanilla extract
  • 1 cup fresh blackberries
  • 2 tbsp honey
  • 1/2 cup all-purpose flour
  • 1/4 cup chopped mixed nuts (almonds, walnuts)
  • 3 tbsp unsalted butter, melted
  • 1 tbsp brown sugar
  • Whipped cream for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). In a bowl, mix flour, chopped mixed nuts, melted butter, and brown sugar to form the crumble. Spread on a baking sheet and bake for 10-12 minutes until golden. Let cool.
  2. Beat cream cheese, granulated sugar, and vanilla until smooth. Fold in chopped pistachios. Spoon mixture into piping bag.
  3. In a small saucepan, simmer blackberries and honey over medium heat for 5-7 minutes until softened and saucy. Let cool slightly.
  4. To assemble, pipe a layer of pistachio cheesecake into serving glasses, top with a spoonful of blackberry compote, then sprinkle with nut crumble. Repeat layers, finishing with crumble and a blackberry on top.
  5. Chill for at least 1 hour before serving. Garnish with whipped cream if desired.

Notes

You can customize the seasonings to taste.
