Description
A creamy, protein-rich blueberry cottage cheese breakfast bake that’s easy to prep and full of flavor. Great for busy mornings or lazy weekends.
Ingredients
1 cup cottage cheese (full fat)
2 eggs
1 cup blueberries (fresh or frozen)
1 tbsp honey or maple syrup
1/4 cup quick oats (optional)
1/4 tsp cinnamon (optional)
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C).
2. In a bowl, whisk eggs, cottage cheese, and honey.
3. Fold in blueberries, oats, cinnamon, and salt.
4. Pour into a greased 8×8-inch baking dish.
5. Bake for 30–35 minutes or until center is set.
6. Cool 10 minutes before slicing.
Notes
Use full-fat cottage cheese for a creamier result.
Add mashed banana or chopped nuts for variation.
Store leftovers in the fridge for up to 4 days.
