Ultra-soft, protein-rich buns studded with juicy blueberries for a dreamy, wholesome treat.


Ingredients

For the Crust:

  • 2 cups cottage cheese
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup fresh blueberries
  • Optional: 1 tbsp lemon zest

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a blender, combine cottage cheese, eggs, honey, and vanilla. Blend until smooth.
  3. In a bowl, whisk together flour, baking powder, and salt. Pour in the wet mixture and stir until just combined.
  4. Gently fold in blueberries and lemon zest, if using. Be careful not to overmix.
  5. Scoop 1/4 cup portions of batter onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 20-25 minutes, or until golden and a toothpick inserted comes out clean. Let cool slightly before serving.

You can customize the seasonings to taste.
