For the Crust:
- 2 cups cottage cheese
- 2 large eggs
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup fresh blueberries
- Optional: 1 tbsp lemon zest
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a blender, combine cottage cheese, eggs, honey, and vanilla. Blend until smooth.
- In a bowl, whisk together flour, baking powder, and salt. Pour in the wet mixture and stir until just combined.
- Gently fold in blueberries and lemon zest, if using. Be careful not to overmix.
- Scoop 1/4 cup portions of batter onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 20-25 minutes, or until golden and a toothpick inserted comes out clean. Let cool slightly before serving.
