For the Crust:

  • 4 boneless, skinless chicken thighs
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium zucchini, sliced
  • 1 small red onion, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

1. Prepare the Crust:

  1. Preheat the air fryer to 400°F (200°C).
  2. In a small bowl, mix paprika, garlic powder, onion powder, cayenne pepper, oregano, thyme, salt, and black pepper to create the Cajun spice blend.
  3. Pat the chicken thighs dry, then rub them evenly with 1 tablespoon of olive oil and the Cajun spice blend.
  4. In a large bowl, toss the bell peppers, zucchini, and red onion with the remaining 1 tablespoon of olive oil and a pinch of salt.
  5. Place the seasoned chicken thighs in the air fryer basket, arranging them in a single layer. Air fry for 10 minutes.
  6. Flip the chicken thighs, add the vegetables around them in the basket, and air fry for another 15-20 minutes, or until the chicken is cooked through (internal temperature of 165°F) and vegetables are tender and slightly charred.
  7. Garnish with fresh parsley if desired, and serve immediately.
