Tender braised fennel served with creamy whipped feta for a delightful side dish.

For the Crust:
- 2 large fennel bulbs, trimmed and quartered
- 2 tbsp olive oil
- 1/2 cup vegetable broth
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 cup crumbled feta cheese
- 2 tbsp Greek yogurt
- 1 tbsp lemon juice
- 1 clove garlic, minced
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium heat. Add fennel quarters and cook until lightly browned, about 5 minutes per side.
- Pour vegetable broth into the skillet, season with salt and pepper, and cover. Reduce heat to low and simmer for 20 minutes, or until fennel is tender.
- In a food processor, combine feta, Greek yogurt, lemon juice, and garlic. Blend until smooth and creamy. Serve the braised fennel with a dollop of whipped feta.
