Tender braised fennel served with creamy whipped feta for a delightful side dish.

For the Crust:

  • 2 large fennel bulbs, trimmed and quartered
  • 2 tbsp olive oil
  • 1/2 cup vegetable broth
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup crumbled feta cheese
  • 2 tbsp Greek yogurt
  • 1 tbsp lemon juice
  • 1 clove garlic, minced

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add fennel quarters and cook until lightly browned, about 5 minutes per side.
  2. Pour vegetable broth into the skillet, season with salt and pepper, and cover. Reduce heat to low and simmer for 20 minutes, or until fennel is tender.
  3. In a food processor, combine feta, Greek yogurt, lemon juice, and garlic. Blend until smooth and creamy. Serve the braised fennel with a dollop of whipped feta.

Notes

You can customize the seasonings to taste.
