Tender braised fennel paired with creamy whipped feta for a delightful side dish.

For the Crust:

  • 2 large fennel bulbs, trimmed and quartered
  • 2 tbsp olive oil
  • 1/2 cup vegetable broth
  • 1/4 cup white wine
  • 1 tsp lemon zest
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup feta cheese, crumbled
  • 1/4 cup Greek yogurt
  • 1 tbsp honey
  • 1 tbsp fresh dill, chopped

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add fennel quarters and cook until lightly browned, about 5 minutes per side.
  2. Pour in vegetable broth and white wine. Reduce heat to low, cover, and simmer for 20 minutes or until fennel is tender.
  3. While the fennel cooks, blend feta, Greek yogurt, honey, and dill in a food processor until smooth and creamy.
  4. Serve braised fennel warm with a dollop of whipped feta on top. Garnish with additional dill if desired.

You can customize the seasonings to taste.
