For the Crust:
- 2 large fennel bulbs, trimmed and quartered
- 2 tbsp olive oil
- 1/2 cup vegetable broth
- 1/4 cup white wine
- 1 tsp lemon zest
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup feta cheese, crumbled
- 1/4 cup Greek yogurt
- 1 tbsp honey
- 1 tbsp fresh dill, chopped
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium heat. Add fennel quarters and cook until lightly browned, about 5 minutes per side.
- Pour in vegetable broth and white wine. Reduce heat to low, cover, and simmer for 20 minutes or until fennel is tender.
- While the fennel cooks, blend feta, Greek yogurt, honey, and dill in a food processor until smooth and creamy.
- Serve braised fennel warm with a dollop of whipped feta on top. Garnish with additional dill if desired.
