A delightful savory-sweet dish featuring creamy brie and tart cranberries rolled in pasta, drizzled with aromatic rosemary-infused honey.

For the Crust:

  • 8 oz fresh pasta sheets
  • 6 oz brie cheese, rind removed and sliced
  • 1/2 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 1/4 cup honey
  • 2 sprigs fresh rosemary
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Lay pasta sheets flat and layer with brie slices, cranberries, and walnuts.
  2. Roll pasta sheets tightly into a log and slice into 1-inch rounds. Arrange in a baking dish.
  3. Drizzle with olive oil, season with salt and pepper, and bake for 20-25 minutes until golden.
  4. While baking, warm honey with rosemary sprigs in a small saucepan over low heat for 5 minutes. Discard rosemary.
  5. Drizzle rosemary honey over baked rotolo before serving.
