For the Crust:
- 8 oz fresh pasta sheets
- 6 oz brie cheese, rind removed and sliced
- 1/2 cup dried cranberries
- 1/4 cup chopped walnuts
- 1/4 cup honey
- 2 sprigs fresh rosemary
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Lay pasta sheets flat and layer with brie slices, cranberries, and walnuts.
- Roll pasta sheets tightly into a log and slice into 1-inch rounds. Arrange in a baking dish.
- Drizzle with olive oil, season with salt and pepper, and bake for 20-25 minutes until golden.
- While baking, warm honey with rosemary sprigs in a small saucepan over low heat for 5 minutes. Discard rosemary.
- Drizzle rosemary honey over baked rotolo before serving.
