These elegant pinwheels feature creamy brie and tangy cranberry sauce rolled in soft flatbread, baked until golden and perfect for appetizers or snacks.

For the Crust:
- 1 large flatbread or lavash wrap
- 4 oz brie cheese, thinly sliced
- 1/2 cup cranberry sauce (whole berry or jellied)
- 1/4 cup chopped walnuts
- 2 tbsp fresh rosemary, finely chopped
- 1 tbsp olive oil
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Lay the flatbread flat and spread cranberry sauce evenly over the surface, leaving a small border around the edges.
- Layer brie slices, walnuts, and rosemary on top of the cranberry sauce. Season lightly with salt and pepper.
- Tightly roll the flatbread into a log, starting from one long edge. Brush the outside with olive oil.
- Slice the log into 1-inch thick pinwheels and place them cut-side up on the baking sheet.
- Bake for 12-15 minutes until the flatbread is golden and the cheese is melted. Serve warm.
