For the Crust:
- 1 sheet puff pastry, thawed
- 4 oz brie cheese, rind removed and cubed
- 1/2 cup cranberry sauce
- 1/4 cup shelled pistachios, chopped
- 1 egg, beaten (for egg wash)
- 1 tbsp fresh thyme leaves
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Roll out puff pastry and cut into 12 rounds using a cookie cutter.
- Press each round into a mini muffin tin. Fill each with a cube of brie and a teaspoon of cranberry sauce.
- Brush edges with egg wash, sprinkle with pistachios and thyme, and season lightly with salt and pepper.
- Bake for 12-15 minutes until pastry is golden and cheese is melted. Let cool slightly before serving.
