For the Crust:
- 1 lb Brussels sprouts, trimmed and halved
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup fresh cranberries
- 1/4 cup orange juice
- 2 tbsp maple syrup
- 1 tbsp balsamic vinegar
- 1 tsp orange zest
- 1/4 cup chopped pecans (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss Brussels sprouts with olive oil, salt, and pepper, then spread on a baking sheet. Roast for 20-25 minutes until tender and browned.
- In a small saucepan, combine cranberries, orange juice, maple syrup, and balsamic vinegar. Bring to a simmer over medium heat, stirring occasionally, until cranberries burst and sauce thickens (about 8-10 minutes). Stir in orange zest.
- Transfer roasted Brussels sprouts to a bowl, pour the cranberry-orange glaze over them, and toss to coat evenly. Garnish with chopped pecans if desired, and serve warm.
