Description

Crispy sweet potato nests filled with creamy burrata cheese, a perfect blend of textures and flavors.


Ingredients

For the Crust:

  • 2 large sweet potatoes, peeled and spiralized
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1 ball burrata cheese
  • 1 tbsp fresh basil, chopped
  • 1 tsp balsamic glaze

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss the spiralized sweet potatoes with olive oil, salt, pepper, and smoked paprika until evenly coated.
  3. Divide the sweet potatoes into 4 portions and shape each into a nest on the prepared baking sheet.
  4. Bake for 20-25 minutes until crispy and golden brown.
  5. Remove from oven and let cool slightly. Place a quarter of the burrata in the center of each nest.
  6. Garnish with fresh basil and drizzle with balsamic glaze before serving.

Notes

You can customize the seasonings to taste.
