Crispy sweet potato nests filled with creamy burrata cheese, a perfect blend of textures and flavors.

For the Crust:
- 2 large sweet potatoes, peeled and spiralized
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp smoked paprika
- 1 ball burrata cheese
- 1 tbsp fresh basil, chopped
- 1 tsp balsamic glaze
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, toss the spiralized sweet potatoes with olive oil, salt, pepper, and smoked paprika until evenly coated.
- Divide the sweet potatoes into 4 portions and shape each into a nest on the prepared baking sheet.
- Bake for 20-25 minutes until crispy and golden brown.
- Remove from oven and let cool slightly. Place a quarter of the burrata in the center of each nest.
- Garnish with fresh basil and drizzle with balsamic glaze before serving.
