For the Crust:
- 1 cup pearl couscous
- 1 1/2 cups vegetable broth
- 8 oz burrata cheese
- 1 cup cherry tomatoes, halved
- 1/2 English cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh basil, chopped
- 2 tbsp fresh parsley, chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Cook the pearl couscous in vegetable broth according to package instructions until tender, then fluff with a fork and let cool.
- In a large bowl, combine the cooled couscous, cherry tomatoes, cucumber, red onion, basil, and parsley.
- Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss gently to combine.
- Transfer the salad to a serving platter, tear the burrata into pieces, and arrange it over the top. Serve immediately.
