Creamy burrata served with a vibrant pistachio-basil pesto and crispy puff pastry twists for a delightful appetizer.

For the Crust:
- 1 ball burrata cheese
- 1 cup fresh basil leaves
- 1/2 cup shelled pistachios
- 1/4 cup grated Parmesan cheese
- 1 clove garlic
- 1/4 cup olive oil
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out the puff pastry sheet and cut into thin strips. Twist each strip and place on the prepared baking sheet. Brush with egg wash and bake for 12-15 minutes until golden and puffed. Let cool.
- In a food processor, combine basil, pistachios, Parmesan, garlic, salt, and pepper. Pulse until finely chopped. With the processor running, slowly drizzle in olive oil until a smooth pesto forms.
- Spread the pesto on a serving plate. Place the burrata ball in the center and drizzle with a little more olive oil. Serve with the puff pastry twists on the side.
