A creamy burrata served with a vibrant pistachio-basil pesto and crispy puff pastry twists for a perfect appetizer.

For the Crust:

  • 1 ball fresh burrata cheese
  • 1 sheet puff pastry, thawed
  • 1/2 cup shelled pistachios
  • 1 cup fresh basil leaves
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 1 clove garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg, beaten (for egg wash)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Roll out the puff pastry sheet and cut into thin strips. Twist each strip and place on a baking sheet lined with parchment paper. Brush with egg wash and bake for 12-15 minutes until golden and crispy.
  2. In a food processor, combine pistachios, basil, Parmesan, garlic, salt, and pepper. Pulse until coarsely chopped. With the processor running, slowly drizzle in olive oil until a smooth pesto forms.
  3. Place the burrata on a serving plate. Spoon the pistachio-basil pesto around the burrata. Serve with the puff pastry twists on the side.
