For the Crust:
- 1 sheet frozen puff pastry, thawed
- 1 cup butternut squash, peeled and diced into small cubes
- 1 tablespoon olive oil
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
- 4 ounces brie cheese, rind removed and cut into small pieces
- 1 tablespoon honey
- Fresh rosemary sprigs for garnish (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss butternut squash cubes with olive oil, thyme, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes until tender and lightly browned.
- Roll out puff pastry on a lightly floured surface. Use a star-shaped cookie cutter to cut out pastry stars and place them on a parchment-lined baking sheet.
- Top each pastry star with a few pieces of roasted butternut squash and a piece of brie cheese.
- Bake in the preheated oven for 12-15 minutes, until the pastry is puffed and golden brown.
- Remove from oven, drizzle lightly with honey, and garnish with fresh rosemary if desired. Serve warm.
