For the Crust:
- 1 lb Brussels sprouts, trimmed and halved
- 2 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup walnuts, roughly chopped
- 1/2 cup crumbled feta cheese
- 2 tbsp honey
- 1/2 tsp red pepper flakes
- 1 tbsp lemon juice
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss Brussels sprouts with olive oil, salt, and pepper on a baking sheet.
- Roast for 20-25 minutes until caramelized and tender, stirring halfway through.
- While sprouts roast, toast walnuts in a dry skillet over medium heat for 3-5 minutes until fragrant. Set aside.
- In a small saucepan, warm honey and red pepper flakes over low heat for 2-3 minutes to infuse. Remove from heat.
- Transfer roasted Brussels sprouts to a serving dish. Top with feta and toasted walnuts.
- Drizzle with hot honey mixture and lemon juice. Toss gently and serve warm.
