For the Crust:
- 1 lb Brussels sprouts, trimmed and halved
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup pecans, finely chopped
- 2 tbsp pure maple syrup
- 1/4 tsp cayenne pepper
- 1 tbsp unsalted butter
- 1 tsp apple cider vinegar
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss Brussels sprouts with olive oil, salt, and black pepper. Spread on a baking sheet in a single layer.
- Roast for 20-25 minutes, stirring halfway, until sprouts are tender and caramelized at the edges.
- While sprouts roast, toast pecans in a small skillet over medium heat for 3-4 minutes until fragrant. Add maple syrup, cayenne, and butter. Cook for 2-3 minutes, stirring, until sticky and glazed. Remove from heat and let cool slightly, then crumble into a coarse dust.
- Toss roasted Brussels sprouts with apple cider vinegar. Transfer to a serving dish and sprinkle generously with the spicy maple pecan dust.
