Description

This savory tart combines sweet caramelized endives with the rich flavor of smoked blue cheese, all wrapped in a flaky pastry.

For the Crust:

  • 3 large endives, halved lengthwise
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 4 ounces smoked blue cheese, crumbled
  • 1 sheet puff pastry, thawed

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Add endives cut side down, sprinkle with brown sugar, and cook until caramelized, about 8 minutes.
  3. Arrange endives in a baking dish, top with crumbled blue cheese, and cover with puff pastry. Bake for 20-25 minutes until golden brown.
