For the Crust:
- 3 large endives, halved lengthwise
- 2 tablespoons olive oil
- 2 tablespoons brown sugar
- 4 ounces smoked blue cheese, crumbled
- 1 sheet puff pastry, thawed
Instructions
1. Prepare the Crust:
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat. Add endives cut side down, sprinkle with brown sugar, and cook until caramelized, about 8 minutes.
- Arrange endives in a baking dish, top with crumbled blue cheese, and cover with puff pastry. Bake for 20-25 minutes until golden brown.
