For the Crust:
- 1 lb cremini mushrooms, cleaned and halved
- 3 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tbsp fresh thyme leaves
- Salt and black pepper to taste
- 4 oz goat cheese, crumbled
- 1/2 cup pecans, roughly chopped and toasted
- 1/4 cup honey
- 1 tsp red pepper flakes
- Fresh parsley, chopped for garnish
Instructions
1. Prepare the Crust:
- In a large skillet over medium heat, melt the butter. Add the mushrooms and cook, stirring occasionally, until they release their liquid and begin to brown, about 10-12 minutes.
- Add the minced garlic and thyme to the skillet. Continue cooking for another 5-7 minutes until the mushrooms are deeply caramelized and the garlic is fragrant. Season with salt and pepper.
- Transfer the mushrooms to a serving dish. Top evenly with crumbled goat cheese and toasted pecans.
- In a small saucepan, warm the honey over low heat. Stir in the red pepper flakes and let infuse for 2 minutes. Drizzle the hot honey over the mushrooms and garnish with fresh parsley before serving.
