For the Crust:
- 1 lb fresh spinach, washed and dried
- 6 cloves garlic, thinly sliced
- 1/4 cup olive oil
- 1/2 cup walnuts, roughly chopped
- 1/2 cup crumbled feta cheese
- 3 tbsp honey
- 1 tsp red pepper flakes
- Salt and black pepper to taste
- 1 tbsp lemon juice
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium heat. Add garlic slices and cook until golden and caramelized, about 3-4 minutes. Remove garlic and set aside.
- In the same skillet, add spinach in batches, stirring until wilted and tender, about 5 minutes. Season with salt and pepper.
- Return caramelized garlic to the skillet. Add walnuts and lemon juice, stirring to combine. Cook for 1-2 minutes.
- Transfer spinach mixture to a serving dish. Top with crumbled feta cheese.
- In a small bowl, mix honey and red pepper flakes. Drizzle over the spinach just before serving.
