For the Crust:
- 4 slices artisan sourdough bread
- 2 cups sliced cremini mushrooms
- 1 cup shredded mozzarella cheese
- 1 small onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons butter, divided
- 1 tablespoon olive oil
- 1 teaspoon fresh thyme leaves
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Heat olive oil and 1 tablespoon butter in a skillet over medium heat. Add onions and mushrooms, cooking until softened and caramelized, about 10-12 minutes.
- Add minced garlic and thyme to the skillet, cooking for another 2 minutes until fragrant. Season with salt and pepper, then remove from heat.
- Spread remaining butter on one side of each bread slice. On the unbuttered side of two slices, layer mozzarella cheese, then the mushroom mixture, and top with the remaining bread slices, buttered side out.
- Heat a clean skillet or griddle over medium heat. Place sandwiches in the skillet and cook for 3-4 minutes per side, until golden brown and cheese is melted. Serve warm.
