Description

A savory and comforting dish featuring roasted squash topped with sweet caramelized onions and melted Gruyère cheese.

For the Crust:

  • 2 medium butternut squash, peeled and cubed
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon brown sugar
  • 1 cup shredded Gruyère cheese
  • 1 teaspoon fresh thyme leaves
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss squash cubes with olive oil, salt, and pepper, then spread on a baking sheet. Roast for 25-30 minutes until tender and lightly browned.
  2. While squash roasts, heat butter in a large skillet over medium heat. Add onions and cook, stirring occasionally, until soft and golden, about 20 minutes. Stir in brown sugar and thyme during the last 5 minutes.
  3. Transfer roasted squash to a baking dish. Top with caramelized onions and shredded Gruyère. Broil for 2-3 minutes until cheese is melted and bubbly. Serve warm.

Notes

You can customize the seasonings to taste.
