For the Crust:

  • 1 sheet frozen puff pastry, thawed
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1 cup shredded Gruyère cheese
  • 1 tablespoon fresh thyme leaves
  • Salt and black pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Roll out puff pastry on a parchment-lined baking sheet and prick all over with a fork. Brush edges with egg wash.
  2. In a large skillet, melt butter with olive oil over medium heat. Add onions, sugar, salt, and pepper. Cook, stirring occasionally, until onions are golden brown and caramelized, about 20-25 minutes.
  3. Spread caramelized onions evenly over puff pastry, leaving a 1-inch border. Sprinkle with Gruyère cheese and fresh thyme.
  4. Bake for 20-25 minutes, until crust is golden and cheese is melted and bubbly. Let cool slightly before slicing and serving.
