For the Crust:
- 2 ripe pears, cored and sliced
- 2 tablespoons butter
- 1 tablespoon brown sugar
- 6 cups mixed salad greens
- 1/2 cup crumbled blue cheese
- 1/4 cup walnuts, toasted
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Melt butter in a skillet over medium heat. Add pear slices and brown sugar, and cook for 5-7 minutes until pears are caramelized and tender. Set aside to cool slightly.
- In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper to make the vinaigrette.
- In a large salad bowl, combine mixed greens, caramelized pears, blue cheese, and toasted walnuts. Drizzle with vinaigrette and toss gently to coat. Serve immediately.
