For the Crust:
- 1 sheet store-bought puff pastry, thawed
- 2 ripe but firm pears, thinly sliced
- 2 tablespoons unsalted butter
- 2 tablespoons brown sugar
- 4 ounces goat cheese, crumbled
- 1/4 cup honey
- 2 sprigs fresh thyme
- 1 egg, beaten (for egg wash)
- Flour for dusting
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). On a floured surface, roll out puff pastry into a 12-inch circle and transfer to a parchment-lined baking sheet.
- In a skillet over medium heat, melt butter and brown sugar. Add pear slices and cook for 5-7 minutes until caramelized. Let cool slightly.
- Arrange caramelized pears in the center of the pastry, leaving a 2-inch border. Sprinkle goat cheese over the pears.
- Fold the pastry edges over the filling, pleating as you go. Brush edges with egg wash.
- Bake for 20-25 minutes until golden brown. Meanwhile, warm honey with thyme sprigs in a small saucepan over low heat for 5 minutes, then discard thyme.
- Drizzle galette with thyme honey before serving warm.
