Description

A rustic, free-form tart featuring sweet caramelized pears, creamy goat cheese, and a fragrant thyme-infused honey drizzle.

For the Crust:

  • 1 sheet store-bought puff pastry, thawed
  • 2 ripe but firm pears, thinly sliced
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 4 ounces goat cheese, crumbled
  • 1/4 cup honey
  • 2 sprigs fresh thyme
  • 1 egg, beaten (for egg wash)
  • Flour for dusting

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). On a floured surface, roll out puff pastry into a 12-inch circle and transfer to a parchment-lined baking sheet.
  2. In a skillet over medium heat, melt butter and brown sugar. Add pear slices and cook for 5-7 minutes until caramelized. Let cool slightly.
  3. Arrange caramelized pears in the center of the pastry, leaving a 2-inch border. Sprinkle goat cheese over the pears.
  4. Fold the pastry edges over the filling, pleating as you go. Brush edges with egg wash.
  5. Bake for 20-25 minutes until golden brown. Meanwhile, warm honey with thyme sprigs in a small saucepan over low heat for 5 minutes, then discard thyme.
  6. Drizzle galette with thyme honey before serving warm.
