A sophisticated appetizer featuring creamy ricotta caramelized under the broiler, paired with sweet roasted grapes and a drizzle of honey thyme syrup on crispy crostini.

For the Crust:
- 1 baguette, sliced into 1/2-inch thick pieces
- 1 cup whole milk ricotta cheese
- 1 cup red seedless grapes
- 2 tablespoons olive oil, divided
- 1 tablespoon fresh thyme leaves, plus extra for garnish
- 2 tablespoons honey
- Salt and black pepper to taste
- 1 clove garlic, halved
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss grapes with 1 tablespoon olive oil, salt, and pepper. Roast on a baking sheet for 15-20 minutes until softened and slightly burst.
- Brush baguette slices with remaining olive oil and toast in the oven or on a grill pan until golden and crisp, about 5-7 minutes. Rub each slice with the cut side of the garlic clove.
- In a small bowl, mix ricotta with a pinch of salt. Spread a generous layer on each crostini. Place under the broiler for 2-3 minutes until lightly caramelized and golden spots appear.
- While ricotta is broiling, warm honey in a small saucepan over low heat with 1 tablespoon thyme leaves for 1-2 minutes to infuse. Remove from heat.
- Top each crostini with a few roasted grapes. Drizzle with honey thyme syrup, garnish with extra thyme, and serve immediately.
