Description

A rustic, free-form tart featuring caramelized sweet potatoes and creamy feta cheese on a flaky crust.


Ingredients

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 45 tablespoons ice water
  • 2 medium sweet potatoes, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 cup crumbled feta cheese
  • 1 egg, beaten (for egg wash)
  • Fresh thyme leaves (for garnish)

Instructions

1. Prepare the Crust:

  1. In a food processor, combine flour and salt. Add chilled butter and pulse until mixture resembles coarse crumbs. Gradually add ice water until dough comes together. Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.
  2. Preheat oven to 375°F (190°C). Toss sweet potato slices with olive oil, honey, smoked paprika, and garlic powder. Spread on a baking sheet and roast for 15 minutes until slightly caramelized.
  3. Roll out dough into a 12-inch circle on a floured surface. Arrange roasted sweet potatoes in the center, leaving a 2-inch border. Sprinkle feta cheese over the potatoes. Fold edges over the filling, pleating as needed. Brush crust with egg wash.
  4. Bake for 25-30 minutes until crust is golden. Garnish with fresh thyme before serving.
