For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 4–5 tablespoons ice water
- 2 medium sweet potatoes, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 cup crumbled feta cheese
- 1 tablespoon fresh thyme leaves
- 1 egg, beaten (for egg wash)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). In a food processor, combine flour and salt. Add chilled butter and pulse until mixture resembles coarse crumbs.
- Add ice water, 1 tablespoon at a time, pulsing until dough comes together. Form into a disk, wrap in plastic, and chill for 30 minutes.
- Toss sweet potato slices with olive oil, honey, smoked paprika, and garlic powder. Roast on a baking sheet for 15 minutes until slightly caramelized.
- Roll out dough into a 12-inch circle on a floured surface. Arrange sweet potato slices in the center, leaving a 2-inch border. Sprinkle with feta and thyme.
- Fold edges of dough over the filling, pleating as you go. Brush crust with egg wash. Bake for 25-30 minutes until golden brown.
- Let cool for 5 minutes before slicing. Serve warm.
