For the Crust:
- 2 medium sweet potatoes, peeled and thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- 4 flatbreads or naan
- 4 ounces goat cheese, crumbled
- 2 tablespoons honey
- 1/4 cup fresh arugula
- 1 tablespoon chopped fresh thyme
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss sweet potato slices with olive oil, smoked paprika, salt, and pepper.
- Spread sweet potatoes on a baking sheet and roast for 20-25 minutes, until tender and caramelized.
- Place flatbreads on a separate baking sheet. Top evenly with roasted sweet potatoes and crumbled goat cheese.
- Bake for 5-7 minutes, until flatbreads are warm and cheese is slightly melted.
- Drizzle with honey, then top with arugula and fresh thyme before serving.
