A deliciously savory flatbread topped with caramelized sweet potatoes, creamy goat cheese, and fresh herbs.


Ingredients

For the Crust:

  • 2 medium sweet potatoes, peeled and thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 4 flatbreads or naan
  • 4 ounces goat cheese, crumbled
  • 2 tablespoons honey
  • 1/4 cup fresh arugula
  • 1 tablespoon chopped fresh thyme

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss sweet potato slices with olive oil, smoked paprika, salt, and pepper.
  2. Spread sweet potatoes on a baking sheet and roast for 20-25 minutes, until tender and caramelized.
  3. Place flatbreads on a separate baking sheet. Top evenly with roasted sweet potatoes and crumbled goat cheese.
  4. Bake for 5-7 minutes, until flatbreads are warm and cheese is slightly melted.
  5. Drizzle with honey, then top with arugula and fresh thyme before serving.

Notes
