For the Crust:
- 4 large carrots, peeled and sliced into 1/4-inch rounds
- 1 tbsp olive oil
- Salt and black pepper to taste
- 4 oz brie cheese, sliced into small pieces
- 1/4 cup cranberry sauce
- 1/4 cup pecans, roughly chopped
- Fresh thyme leaves for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss carrot rounds with olive oil, salt, and pepper, then arrange in a single layer on a baking sheet.
- Roast for 20-25 minutes, until carrots are tender and lightly browned.
- Remove from oven and top each carrot round with a piece of brie. Return to oven for 3-5 minutes, until brie is melted.
- Top each round with a small dollop of cranberry sauce and a sprinkle of chopped pecans.
- Garnish with fresh thyme leaves and serve warm.
