For the Crust:
- 1 fresh pineapple, peeled, cored, and sliced into rings
- 2 cups coconut milk
- 1/4 cup honey or agave syrup
- 2 cups ice cubes
- 1/4 cup fresh lime juice
- Pinch of sea salt
- Toasted coconut flakes and lime wedges for garnish
Instructions
1. Prepare the Crust:
- Preheat a grill or grill pan over medium-high heat. Grill pineapple rings for 2-3 minutes per side until charred. Let cool, then chop into chunks.
- In a blender, combine charred pineapple, coconut milk, honey, ice, lime juice, and sea salt. Blend until smooth and slushy.
- Taste and adjust sweetness if desired. Pour into glasses, garnish with toasted coconut flakes and a lime wedge, and serve immediately.
