A refreshing and tropical mocktail featuring charred pineapple blended with creamy coconut and ice for a slushy, Instagram-worthy treat.

For the Crust:

  • 1 fresh pineapple, peeled, cored, and sliced into rings
  • 2 cups coconut milk
  • 1/4 cup honey or agave syrup
  • 2 cups ice cubes
  • 1/4 cup fresh lime juice
  • Pinch of sea salt
  • Toasted coconut flakes and lime wedges for garnish

Instructions

1. Prepare the Crust:

  1. Preheat a grill or grill pan over medium-high heat. Grill pineapple rings for 2-3 minutes per side until charred. Let cool, then chop into chunks.
  2. In a blender, combine charred pineapple, coconut milk, honey, ice, lime juice, and sea salt. Blend until smooth and slushy.
  3. Taste and adjust sweetness if desired. Pour into glasses, garnish with toasted coconut flakes and a lime wedge, and serve immediately.
