For the Crust:

  • 8 oz brie cheese, sliced
  • 8 oz sharp cheddar cheese, cubed
  • 8 oz goat cheese, crumbled
  • 1 cup cherry tomatoes
  • 1 cucumber, sliced
  • 1 bell pepper (any color), sliced
  • 1 bunch radishes, halved
  • 1/2 cup pitted olives
  • 1/4 cup fresh parsley
  • 1/4 cup fresh basil
  • 1/4 cup fresh chives
  • 1/2 cup extra virgin olive oil
  • 1 clove garlic, minced
  • 1 tsp lemon zest
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Arrange the brie, cheddar, goat cheese, cherry tomatoes, cucumber, bell pepper, radishes, and olives artfully on a large serving platter.
  2. In a blender or food processor, combine the parsley, basil, chives, olive oil, minced garlic, lemon zest, salt, and pepper. Blend until smooth and well combined.
  3. Drizzle the herb oil over the arranged cheese and vegetables just before serving. Serve immediately with crackers or bread on the side.
