For the Crust:
- 8 oz brie cheese, sliced
- 8 oz sharp cheddar cheese, cubed
- 8 oz goat cheese, crumbled
- 1 cup cherry tomatoes
- 1 cucumber, sliced
- 1 bell pepper (any color), sliced
- 1 bunch radishes, halved
- 1/2 cup pitted olives
- 1/4 cup fresh parsley
- 1/4 cup fresh basil
- 1/4 cup fresh chives
- 1/2 cup extra virgin olive oil
- 1 clove garlic, minced
- 1 tsp lemon zest
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Arrange the brie, cheddar, goat cheese, cherry tomatoes, cucumber, bell pepper, radishes, and olives artfully on a large serving platter.
- In a blender or food processor, combine the parsley, basil, chives, olive oil, minced garlic, lemon zest, salt, and pepper. Blend until smooth and well combined.
- Drizzle the herb oil over the arranged cheese and vegetables just before serving. Serve immediately with crackers or bread on the side.
