Cheesy Garlic Butter Cajun Chicken Rotini in Alfredo Cream Sauce

Creamy, spicy, and irresistibly cheesy, this Cajun chicken rotini is smothered in a rich garlic butter Alfredo sauce for a comforting and flavorful meal.

For the Crust:
- 1 lb boneless, skinless chicken breast, cubed
- 8 oz rotini pasta
- 2 tbsp Cajun seasoning
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
1. Prepare the Crust:
- Cook rotini according to package directions until al dente. Drain and set aside.
- Season cubed chicken with Cajun seasoning, salt, and pepper. In a large skillet, melt 2 tbsp butter over medium-high heat and cook chicken until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
- In the same skillet, melt remaining 2 tbsp butter. Add minced garlic and sauté until fragrant, about 1 minute. Pour in heavy cream and bring to a gentle simmer.
- Reduce heat to low and stir in Parmesan cheese until melted and smooth. Add cooked chicken and pasta to the skillet, tossing to coat in the sauce. Sprinkle mozzarella cheese on top and cover until melted, about 2-3 minutes.
- Garnish with fresh parsley and serve immediately.
Notes
You can customize the seasonings to taste.
