Description
A rich and comforting pasta dish featuring tender Cajun-spiced chicken tossed with rotini in a decadent garlic butter and three-cheese cream sauce.
Ingredients
For the Crust:
- 1 lb boneless, skinless chicken breasts, cubed
- 8 oz rotini pasta
- 2 tbsp Cajun seasoning
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup shredded mozzarella cheese
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
1. Prepare the Crust:
- Bring a large pot of salted water to a boil and cook rotini according to package directions until al dente. Drain and set aside.
- Season cubed chicken with Cajun seasoning. In a large skillet, melt 2 tbsp butter over medium-high heat. Add chicken and cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
- In the same skillet, melt remaining 2 tbsp butter. Add minced garlic and sauté until fragrant, about 1 minute. Pour in heavy cream and bring to a simmer.
- Reduce heat to low. Stir in Parmesan, cheddar, and mozzarella cheeses until melted and smooth. Season sauce with salt and pepper to taste.
- Return cooked chicken to the skillet, add drained rotini, and toss until everything is well coated in the cheese sauce. Garnish with fresh parsley before serving.
Notes
You can customize the seasonings to taste.
