For the Crust:
- 2 boneless, skinless chicken breasts, cooked and sliced
- 1 ripe avocado, mashed
- 4 slices of cheddar cheese
- 4 slices of whole-grain bread
- 2 tablespoons mayonnaise
- 1 tablespoon butter, softened
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat a skillet or panini press over medium heat.
- Spread mayonnaise on one side of each bread slice. On two slices, layer sliced chicken, mashed avocado, and two slices of cheese each. Season with garlic powder, salt, and pepper. Top with the remaining bread slices, mayonnaise-side down.
- Butter the outer sides of each sandwich lightly.
- Place sandwiches in the skillet or press. Cook for 3-4 minutes per side until golden brown and cheese is melted. If using a panini press, cook according to manufacturer instructions until crisp.
- Remove from heat, let cool slightly, slice in half, and serve warm.
