Ingredients
4 cups watermelon, cubed
2 cups cucumber, sliced into half-moons
1/4 red onion, thinly sliced
1 jalapeño or serrano chili, thinly sliced (optional for heat)
3 tbsp fresh lime juice
2 tbsp olive oil
1 tbsp honey or agave syrup
1/2 tsp chili powder
1/4 tsp cayenne pepper (optional)
1/4 tsp salt
1/4 cup fresh cilantro, chopped
Crumbled feta cheese, for garnish (optional)
Instructions
1. In a small bowl, whisk together lime juice, olive oil, honey, chili powder, cayenne, and salt to make the dressing.
2. Place watermelon cubes, cucumber slices, and red onion in a large mixing bowl.
3. Pour dressing over the salad ingredients and gently toss to combine.
4. Top with sliced chili, cilantro, and crumbled feta (if using).
5. Chill for 10 minutes before serving for best flavor.
Notes
Serve cold for maximum refreshment.
Adjust chili powder and cayenne to control spice level.
Feta cheese is optional but adds a delicious salty contrast.
