Description
A refreshing chilled tomato broth served with a melting basil oil cube for a burst of herbal flavor.

For the Crust:
- 4 cups ripe tomatoes, chopped
- 1 small shallot, minced
- 2 cloves garlic, minced
- 1/4 cup fresh basil leaves, packed
- 1/2 cup olive oil
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon sugar
- 1 cup ice cubes
Instructions
1. Prepare the Crust:
- Blend tomatoes, shallot, garlic, lemon juice, salt, pepper, and sugar until smooth.
- Strain the mixture through a fine-mesh sieve into a bowl, pressing to extract all liquid. Discard solids.
- Pour the strained broth into serving bowls and chill in the refrigerator for at least 2 hours.
- Meanwhile, blend basil leaves with olive oil until smooth. Pour into an ice cube tray and freeze until solid (about 1 hour).
- To serve, place a basil oil cube in the center of each chilled tomato broth bowl. The cube will melt slowly, releasing the basil flavor.
