Chilled Tomato Broth with Melting Basil Oil Cube

Description

A refreshing chilled tomato broth served with a melting basil oil cube for a burst of herbal flavor.


Ingredients

For the Crust:

  • 4 cups ripe tomatoes, chopped
  • 1 small shallot, minced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil leaves, packed
  • 1/2 cup olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon sugar
  • 1 cup ice cubes

Instructions

1. Prepare the Crust:

  1. Blend tomatoes, shallot, garlic, lemon juice, salt, pepper, and sugar until smooth.
  2. Strain the mixture through a fine-mesh sieve into a bowl, pressing to extract all liquid. Discard solids.
  3. Pour the strained broth into serving bowls and chill in the refrigerator for at least 2 hours.
  4. Meanwhile, blend basil leaves with olive oil until smooth. Pour into an ice cube tray and freeze until solid (about 1 hour).
  5. To serve, place a basil oil cube in the center of each chilled tomato broth bowl. The cube will melt slowly, releasing the basil flavor.

Notes

You can customize the seasonings to taste.
