A refreshing summer soup blending sweet watermelon, crisp cucumber, and fresh mint for a light and hydrating dish.


Ingredients

For the Crust:

  • 4 cups seedless watermelon, cubed
  • 1 large cucumber, peeled and chopped
  • 1/4 cup fresh mint leaves
  • 2 tablespoons lime juice
  • 1 small shallot, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Combine watermelon, cucumber, mint, lime juice, and shallot in a blender.
  2. Blend until smooth, then drizzle in olive oil while blending.
  3. Season with salt and pepper to taste. Chill for at least 1 hour before serving.
