For the Crust:
- 4 large egg whites
- 1 cup granulated sugar
- 1 tsp white vinegar
- 1 tsp cornstarch
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1 cup fresh cherries, pitted and halved
- 1/2 cup dark chocolate shavings
Instructions
1. Prepare the Crust:
- Preheat oven to 250°F (120°C) and line a baking sheet with parchment paper.
- In a clean bowl, beat egg whites until stiff peaks form, gradually adding granulated sugar until glossy.
- Fold in vinegar and cornstarch, then pipe or spoon meringue into small mounds on the baking sheet.
- Bake for 1 hour, then turn off oven and let meringues cool completely inside.
- Whip heavy cream with powdered sugar until soft peaks form, then fold in cherries and chocolate shavings.
- Spoon the cream mixture into cooled meringue shells just before serving.
