For the Crust:
- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
- 1/2 cup heavy cream
- Assorted fresh berries (strawberries, raspberries, blueberries)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a bundt cake pan.
- In a large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
- In another bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually add dry ingredients to the wet mixture alternately with buttermilk, beginning and ending with dry ingredients. Stir in vanilla extract.
- Pour batter into prepared bundt pan and bake for 35-40 minutes or until a toothpick inserted into the center comes out clean. Cool for 10 minutes in the pan, then turn out onto a wire rack to cool completely.
- To make the ganache, heat heavy cream in a saucepan over medium heat until just about to simmer. Pour over chocolate chips in a bowl and let sit for 5 minutes, then stir until smooth and glossy.
- Drizzle ganache over the cooled cake and garnish with fresh berries before serving.
