- 1 cup ricotta cheese
- 1/4 cup chia seeds
- 1 cup milk (dairy or plant-based)
- 2 tablespoons maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- Pinch of ground cloves
- Fresh pomegranate seeds and mint leaves for garnish
Instructions
1. Prepare the Crust:
- In a medium bowl, whisk together ricotta, chia seeds, milk, maple syrup, vanilla, cinnamon, nutmeg, and cloves until smooth.
- Cover and refrigerate for at least 4 hours or overnight, stirring once after 1 hour to prevent clumping.
- Before serving, stir the pudding and divide into bowls. Top with pomegranate seeds and mint leaves for a festive touch.
