A sweet and savory side dish featuring roasted sweet potato rounds topped with tangy feta, tart cranberries, and crunchy honey pecans.

For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled feta cheese
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1 tablespoon honey
  • 1 tablespoon olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss sweet potato rounds with melted butter, cinnamon, salt, and pepper. Arrange in a single layer on the baking sheet.
  3. Roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
  4. While potatoes roast, heat olive oil in a small skillet over medium heat. Add pecans and honey, stirring until toasted and coated, about 3-4 minutes.
  5. Remove sweet potatoes from oven. Top with feta, cranberries, and honey pecans. Drizzle with additional honey if desired and serve warm.
