For the Crust:
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 1/2 cups all-purpose flour
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/4 cup holiday sprinkles
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C) and line baking sheets with parchment paper.
- In a large bowl, beat the softened butter with an electric mixer until light and fluffy, about 3-4 minutes.
- Gradually add the powdered sugar and continue beating until well combined and smooth.
- Mix in the vanilla extract, then add the flour, cornstarch, and salt, mixing on low speed just until the dough comes together.
- Drop dough by rounded teaspoonfuls onto the prepared baking sheets, or pipe using a star tip for a decorative look.
- Sprinkle the tops of the cookies generously with holiday sprinkles.
- Bake for 15-18 minutes, or until the edges are just lightly golden. Do not overbake.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
